Things like this are close to her heart when it comes to using journalism to make a positive difference in people's lives.</p>
<p><br></p>
<p>Selina later branched further into her celebrity passion to become a Showbiz Writer at Heat magazine, covering red carpet events, showbiz parties, and various TV launches before going freelance for two years with her works being published in new! magazine, Star magazine, Now magazine and on Bang Showbiz news wire. One of her biggest celebrity achievements - aside from generating celebrity exclusives - was interviewing Take That (including Robbie Williams) and bumping into Simon Cowell so much at events she told him 'I'm calling you my showbiz dad!'</p>
<p><br></p>
<p>In 2017 she joined TI Media as a Senior Reporter on Woman, Woman's Own, Woman&amp;Home, and Woman's Weekly celebrity desk before branching online in 2020 when Future gave her the opportunity to focus on digital-first.</p>
<p><br></p>
<p>When she's not interviewing celebrities you can find her exploring new countryside walking routes, catching up with friends over good food, or making memories (including award-winning scarecrows!)</p> </dc:description>

<p>After setting her sights on a career in journalism as a teenager, Ellie started off as an intern at a local entertainment magazine where she wrote reviews, features, and interviewed one or two famous faces (Jason Donovan was a career highlight!). Following a year out of education, which consisted of writing, waitressing and travelling all over the world, Ellie started her undergraduate degree in Journalism at Cardiff University. She got stuck into student life, joining the netball team, radio station and, of course, the magazine, and graduated with a first-class degree and an award for the highest achieving student on her course. Since then, she’s achieved a Master’s in Magazine Journalism at Nottingham Trent University and worked with BBC Good Food, The Big Issue and the Nottingham Post, while continuing to freelance as an arts and entertainment writer.
One TikTok user has revealed how you can make sausage rolls at home in just 15 minutes with this air fryer hack.

The popularity of air fryers continues to soar - and it's no surprise given their quick cooking times and low energy consumption. Many have invested in the best air fryers out there, but once that purchase is made it's time to find the best air fryer recipes and research all the different foods you can cook in an air fryer.

Fortunately, social media is awash with quick tips and tricks to get the most out of this trendy kitchen appliance. And one air fryer recipe that's got people talking uses just three ingredients to make sausage rolls - and they promise to be 'better than Greggs'.

The hack was shared by TikTok star Becky Excell, who has racked up over 230,000 followers on the app for the quick and easy recipes she shares - most of which are gluten free. She says in the popular video, "I must admit, I love a big sausage roll, but Greggs just isn't for me. So I make my own."

Though a controversial statement, Becky goes on to show how she makes her superior sausage rolls using shop-bought puff pastry, sausages and an egg wash. "In less than 15 minutes, you could have fresh, homemade sausage rolls," she says.

How to make sausage rolls in an air fryer

                            @beckyexcell

♬ original sound - Becky Excell

Ingredients

400g sausages

1 pack of JusRoll puff pasty (Becky uses the gluten-free version)

1 egg, beaten

Method

Remove the skin from the sausages.

Unroll the pack of pastry and cut it in half lengthways.

Add the sausage meat down the centre of each section of pastry - Becky says you could optionally add mustard at this point too.

Brush one edge of the pastry with the egg and fold over the top of the sausage meat.

Crimp the edges with a fork and brush the top with egg, before cutting small slashes down the centre of each roll.

Cut each roll to fit in your air fryer basket, and air fry at 200ºC for 12-14 minutes.

Becky adds that you could make your own pastry if you want to, and says, "Another thing I really like about making these in the air fryer is that any excess fat drips through the basket so they’re never soggy. No soggy bottoms here."

And her followers were impressed with the hack too, with several commenting their approval on the post. One said, "I’ve just done these. Super easy and came out great. Thanks!" Another added, "So simple and so effective".

Many others shared their suggestions to make the recipe even easier and tastier, with one user writing, "It will be cheaper and better quality to buy sausage meat from butchers."

Elsewhere, another fan commented, "Add some onion salt/granules after you have egg washed the pastry and adds another layer of greatness to sausage rolls!"

Would you give this recipe a go?

Looking for more air fryer hacks? <dc:description> <p>Keiron's relationship with food has changed drastically over the years. He didn’t come from a ‘foodie’ family and has no charming anecdotes of baking with his grandmother, nor any family recipes he can call upon when lacking inspiration. Coming from fairly humble beginnings, food was more of a necessity than an occasion - the only time food played a staring role was at Christmas, though nothing extravagant. Keiron's love of food happened quite by accident. As an arts graduate, he was looking for new outlets to channel his creativity when he stumbled upon a cake decoration course back in 2010. He was instantly hooked and his love affair with all things cake started from there. Keiron later went on to teach the course for a year, before setting up his own wedding cake business in 2015. In late 2016 he won a scholarship at the world-renowned culinary institute - Le Cordon Bleu, London, where he studied the art of French Pâtisserie. Since then Keiron has worked in some of London’s finest 5-star hotels, collecting a wealth of knowledge along the way. Though he is currently enjoying a slower pace of life outside the professional kitchen as a Food Writer and Stylist - but who knows what other foodie adventures lay ahead… Growing up with the perception that cooking was an inconvenience, to something he is now building a career around is a strange reality. Food isn’t just a job, it truly is Keiron's passion. He hits the kitchen when happy or sad, nervous or feeling conflicted. He cooks when in love, or to distract from heartache. He relishes any opportunity to have loved ones over to thrust any new creations under their noses. Keiron gets more joy from making others happy with food, than cooking for himself.</p> </dc:description>

If you’re one of the many isolators turning your hand to baking, then you in for a treat - as Papa John’s have shared the recipe for their much-loved Marmite and cheese scrolls, as well as the cinnamon variety.

For the first time ever, the Papa John’s is sharing a recipe of a menu item that the customers go crazy for!

With everyone being told to stay at home, we’re all seeking new ways to fill our days. People are learning to knit, paint, or even speak another language. However, its home baking that seems to be ahead of the pack.

With this in mind, the pizza chain has decided to share their deliciously moreish scroll recipe with all of us.

But Papa John's are not the first. Restaurant chains across the country are revealing recipes so that the nation can all still enjoy their fast food favourites during lockdown.

McDonalds are showing us how to make their Egg McMuffin’s, while Greggs share their recipe for Steak Bakes.

Papa John’s offer a range of scroll flavours, but the TWO recipes have chosen to share are Marmite and cheese, and cinnamon.

Papa John’s UK R&D Director, Tom Allen, says: “We’ve decided to share our recipes so Scroll lovers don’t have to miss out. Each variant doesn’t require too many ingredients either, so we hope that everyone can give it a go with what they’ve got in the cupboard.”

Marmite Scrolls (Image: Papa John's)

Papa John’s Scroll Recipe

For the Dough:

200ml lukewarm milk or almond milk for a vegan option

50g caster sugar, plus 1tsp

25g fresh baker’s yeast or 7g packet of dried yeast

380g strong white bread flour

50g caster sugar

Large pinch of salt

70g melted butter

For the Marmite filling:

Marmite

50g cheese

OR for the cinnamon filling mixture:

2tsp of ground cinnamon

40g of Demerara sugar

10g caster sugar

25g soft butter

For the cinnamon icing:

150g icing sugar

3-4 tablespoons of milk or water

2 teaspoons of vanilla essence - if you have it, don’t worry if not

Method

1. Heat the milk in a saucepan or in the microwave until lukewarm - do not let it boil.

2. Into the milk, add 1tsp sugar, the yeast and 130g flour together and leave until the mix starts to bubble - this will take 10 -15 mins.

3. Add the remaining sugar, salt, butter and flour to your bubbling mixture and mix until this forms a dough. If using a mixer, use your dough hook on a medium speed for 3-5 mins until the dough is well kneaded and no longer sticky. If you are kneading by hand this can take up to 10 mins

4. Rest your dough in a warm place for 30 mins covered with a tea towel until its doubled in size. In the meantime you can make the fillings:

5. To make the cinnamon filling, simply mix all ingredients into a paste and set aside. To make the marmite filling, all you need to do at this point is grate the cheese, at Papa John’s we use our mozzarella for the cheesy stretch, but you can use cheddar.

Cinnamon Scrolls (Image: Papa John's)

6. Once the dough has proved, knock it back and - if making both recipes, cut into two equal pieces. Roll out on a lightly floured surface to around 3-4mm think. In Papa John’s stores this is stretched by hand; our pizza makers go through a lot of training to do this.

7. Once the dough is rolled out you can add the fillings to each, leaving one inch from the top of the dough clear so you can brush with water to seal the scroll.

8. If making Marmite scrolls, add as you like. This really is a personal preference but bear in mind when Marmite is baked it does get a bit stronger. Once this is spread over the dough, sprinkle with cheese.

9. Spread a generous layer of cinnamon paste over the second dough. The more that you put, the more it will bubble out when cooking, making them nice and sticky.

10. Roll the scrolls up and press them down gently on the edge you brushed with water to stick. Cut into pieces 3cm wide and place on your baking tray. Cover with a tea towel again and let prove for 30 mins.

11. Brush with egg wash and bake at 200C/180C Fan/Gas 6 for 10 – 15 mins.

12. Make the icing for the cinnamon scrolls by mixing all ingredients together ready to drizzle over once baked; this is best done about 10 mins after baking.
