Sweet and simple, these honey-baked cornflake cakes are a brilliant teatime treat.
Cornflake cakes are such great little crunchy snacks for kids. We love this version which only uses four ingredients and is ready to eat in just 20 minutes. Cornflake nest recipes often include chocolate, but this version is simply honey, sugar and butter. This is brilliant if you're serving these up to your little ones after school and they've brought friends home with them. They are nut and dairy-free, and vegetarian. If your little ones or their playmates are gluten intolerant, it's an easy swap to use gluten-free cornflakes as well. This recipe will make 6-8 mini cakes, but you can scale up if you're making for a party or a whole class.
Ingredients
- 3 tbsp butter
- 200g sugar
- 1 tbsp honey
- 4 cups of cornflakes

Method
- Preheat oven to 150°C/300°F/Gas 2.
- Heat the butter, sugar and honey in a small saucepan until frothy, then remove from the heat.
- Add cornflakes and mix well.
- Spoon into cupcake cases and bake for 10 mins. Remove from the oven and leave to cool before handing them out.
Top tip for making Cornflake cakes
Add a little colour to the finished cakes by sprinkling a few rainbow hundreds and thousands over the top.
