Method
- Heat the oven to 190C (170C fan, Gas 5). Line 2 baking sheets with baking paper. Using an electric mixer or wooden spoon, beat the spread and sugar together until soft and creamy.
- Beat in the egg and vanilla extract. Sift in the flour, baking powder and salt. Add the chopped chocolate and mix to form a firm dough.
- Roll the dough into 16 even-sized balls and place on the baking sheets allowing space between each one for them to spread. Flatten slightly with your fingers or the back of a fork and bake for 15 minutes until golden.
- Leave on the baking sheets for 5 minutes before transferring to a wire rack to cool. As they cool the cookies will become firm and crisp.
Top tips for making our gluten free cookies
If you find that your chocolate chip cookies are falling apart, next time bake them for less time. You could also portion the dough into smaller cookies as these will hold their shape better.
Is chocolate gluten-free?
A plain chocolate bar, whether dark, milk or white, does not contain any ingredients that have gluten.
However, many factories that process chocolate bars, also process other products where gluten may be present. Therefore you will often find that the packaging states chocolate could contain traces of gluten.
How can I flavour my gluten-free cookies?
If you prefer, swap the chocolate for raisins, sultanas, chopped dried apricots or dried cranberries. For an extra boost of flavour you could also add a teaspoon of ground cinnamon.
Do you store gluten-free cookies in the fridge?
These cookies are best stored in an airtight container at room temperature.
“Consider swapping 50g of the plain flour for 50g ground almonds if you want a subtle nutty flavour to the cookies.”
For the quickest results, we recommend using an electric hand mixer to combine the butter and sugar.
