Mangetout is quite a versatile ingredient and some of the mangetout recipes you can try include stir-fries, as well as seafood dishes and salads.

Mangetout is a type of garden pea that’s picked while still very young, which means that is still flat and the peas have not yet developed (the common sugar snap pea). It’s available in the UK from June to September, but you can probably also find them fresh in supermarkets from other countries all year round, as well as frozen.

If you find them fresh, make sure you buy them on very green rather than yellow, as they deteriorate very quickly.
