Three unexpected ways with Brussels sprouts
These are the best ways yet to get the kids eating their greens (mainly because they involve chocolate)...
What would Christmas be without Brussels sprouts? We've given our sprouts a seriously delicious twist this winter. Think croquette potatoes, guacamole and chocolates that look just like sprouts.
If you're looking for something new to whip up for Christmas this year, you've come to the right place. These pimped sprouts really do take our favourite Christmas veggie and give it a mind-boggling twist.
Our sprout ideas are great for using up leftover Brussels after the big meal – they're just perfect for sharing on Boxing Day, plus they're so easy to make too.
Brussels sprout croquettes
Yes, you really can turn leftover sprouts into these mouth-watering wonders. They're so easy to make and taste delicious too - a great way to get the kids to eat their greens!
You will need 450g mashed potatoes, 1 egg yolk, 100g grated cheese, 100g shredded steamed sprouts, salt and pepper. To coat the croquettes you will need some plain flour, a beaten egg and some breadcrumbs, and then vegetable oil to fry.
To make the croquettes mix the potatoes, egg yolk, sprouts and cheese together, season well with the salt and pepper before shaping into small cylinders. Dunk each one in the flour, then the egg, then the bread crumbs and put onto a plate.
Heat the vegetable oil in a deep frying pan until a small piece of mixture sizzles immediately when dropped into it. Add the croquettes and fry for around 3-4 minutes or until golden. Serve with your favourite dips!

Brussels sprout guacamole (sproutamole!)
How good does this sprout guacamole look? Serve with tortillas just like classic guacamole and watch it disappear in minutes! Another fab way of using up leftover sprouts, it only takes a few ingredients to make this dip.
You will need 2 avocados, the juice of one lime, salt and pepper to taste and 100g shredded steamed sprouts. Mash the avocado and mix with all the other ingredients before dunking into with tortilla chips.
Brussels sprout chocolates
Ok, so they're not really Brussels sprouts – but they sure look like them! These Brussels sprout truffles are made with none other than white chocolate, green food colouring and Maltesers. Yes, Maltesers are hiding under that convincing sprout disguise.
To make these truffles you will need a bowl of white chocolate, green gel food colouring and Maltesers. Melt the white chocolate and a few drops of green food colouring in the microwave on a low heat stirring every 10 seconds until melted.
Leave to cool slightly so you don't melt the milk chocolate shells of the Maltesers and then spoon onto the Maltesers to make Brussels sprout like layers. You can use a teaspoon or skewer to drag layers of chocolate round the outside to look like the leaves.
Ta-dah! You've made amazing Brussels sprout Malteser treats!
