Bananas go so well with chocolate and peanuts so why not combine all three ingredients to make a delicious and simple loaf cake?
We've used Reese's Pieces bars for our chocolate peanut mix but you could also use a combination of dark chocolate and smooth peanut butter. When you're making the loaf, keep the pieces of chocolate fairly big so that they hold their shape once cooked. That way everyone will find a chunk of chocolate in their slice.
Unlike other cakes, banana-based ones get better with time as the bananas make the cake moist and flavoursome.
Ingredients
- 175g unsalted butter
- 175g dark brown sugar
- 175g self-raising flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 2 eggs
- 3 ripe bananas
- 125g Reese's Pieces/dark chocolate (plus 2 tbsp peanut butter if using dark choc)
- 1/2 tsp vanilla extract
Method
- Preheat the oven to 170°C/325°F/Gas Mark 3 and line a loaf tin with baking parchment.
- Beat the sugar and butter together in a free-standing mixer until light and fluffy. Then add the eggs, flour, baking powder and cinnamon.
- In a bowl mash the bananas and then fold into the mixture with the chopped chocolate and vanilla.
- Pour into the loaf tin and cook in the oven for 1 hour. Check to see if it's cooked with a skewer and bake for another 10 minutes if needed.

Store your over-ripe bananas in the freezer and simply defrost when you need them.
