We all love cheeseburgers, but once you’ve had one, you’ve had a thousand, surely? Think again! There are as many ways to make a cheeseburger as there are varieties of cheese. So why not give your humble burger an Italian twist by using mozzarella and fresh basil leaves instead of the more traditional lettuce and cheddar cheese? This alternative recipe takes almost no extra effort and will really impress the die-hard burger fans amongst your family and friends. Chop up the basil and onions, fry up your patties, melt a little mozzarella on top of them and you’re done!
Ingredients
- 400g lean mince beef
- 2 handfuls of fresh picked basil leaves
- 4 spring onions, white parts only, finely chopped
- Salt and freshly ground pepper to season
- 2 burger buns
- 2 slices firm mozzarella cheese

Method
- Chop ¾ of the basil and all the spring onions then, in a bowl, combine with the mince. Season with salt and pepper.
- Flatten out into 2.5cm-3.5cm thick burger patties.
- Add a little oil to a frying pan and cook the burgers to the way you like them (medium-rare takes about 4 mins each side; 6 mins per side for well done).
- Toward the end of cooking, place a slice of mozzarella on top of each burger and allow to melt a little.
- Place on lightly toasted burger buns garnish and with more basil leaves.
Top Tip for making Basil and mozzarella cheeseburger
Serve with tomatoes, halved and drizzled with balsamic vinegar and salt and pepper. You can make a potato salad by boiling chopped new potatoes until tender, then dressing with a mix of mayonnaise and creme fraiche.
