
Rich cheddar cheese adds crunch and flavour to these little biscuits that’ll go great on their own, with a range of dips or covered in cream cheese for a combination of textures. Taking just 10 mins to cook, they’d also work as a nice little treat in the kids’ packed lunches as a tasty savoury snack, where you could use milder cheddar if they’re not a fan of strong cheese. They're nice and simple to make too, which means they're a fun activity for the kids to help make them with you.
Ingredients
- 125g plain flour
- ½ tsp baking powder
- 60g softened butter cubed
- 1 egg
- 80g of grated strong cheddar
- 1½ tsp chopped chives
- 1bsp iced water

Method
- Preheat oven to 190°C/375°F/Gas Mark 5.
- Line 3 baking sheets with baking parchment or greaseproof paper.
- Sift the flour and baking together.
- Place in a food processor and blitz with the butter until it resembles breadcrumbs.
- Add the egg, cheddar and chives and blitz until it comes together as a dough.
- Turn out the dough onto a piece of baking parchment and bring all the dough together into a large ball.
- Place another piece of baking paper over the top and roll to approximately 3mm thick.
- Remove the top layer of paper and cut into rounds using a 5cm cutter, and place onto the baking sheets.
- Bring the remaining dough together and repeat stage 6 until all the dough is used.
- Bake for 8 to 10 mins or until lightly brown.
- Remove from the oven and allow to cool for 10 mins before transferring to a wire rack to cool fully.

These cheesy biscuits would also be a great addition to crackers on a cheese board.
