A Chicken Caesar jacket potato filling is a quick and easy way to use up leftover chicken and transform it into a whole new meal. Slice leftover roast chicken and toss with shredded little gem lettuce, grated Parmesan cheese, anchovies and a lemon and mayo dressing. It's really easy to scale this recipe up to feed the whole family, or mix and match the ingredients to suit what you've got in your fridge
Ingredients
- 1 McCain's microwave jacket potato
- 1tbsp mayonnaise
- a squeeze of lemon
- 1tbsp Parmesan cheese, grated
- 3 slices leftover roast chicken, chopped
½
- little gem, shredded
- freshly chopped parsley

Method
Cook the jacket potato in the microwave, according to packet instructions.
Put the mayonnaise, lemon juice and Parmesan into a bowl and mix together to make a dressing. Add the chicken and mayonnlettuce and fold together. Season well.
Take the jacket potato out of the microwave and put on a plate. Split open, fill with the mixture and scatter over the parsley to serve.
