Heard of cloud bread? This low-carb bread is made with eggs, cream cheese, a pinch of salt and cream of tartar, with no flour or grains - making it light and fluffy, just like a cloud! This 4-ingredient bread makes a lighter burger bun option, can be served just like pitta with falafel and salad or can be ripped and dipped into a tub of hummus. This recipe makes 8 slices and takes only 30 mins to prepare and bake. Try it at home and see what everyone's talking about. It's well worth the effort if you're trying to cut carbs but miss bread!
Ingredients
- 4 medium eggs, separated
- 65g cream cheese
- pinch of salt
- ¼tsp cream of tartar
You will also need:
- 2 baking sheets, greased and lined with baking parchment

Method
- Heat the oven to 160C, gas 3. Whisk the egg whites with a pinch of salt until stiff; start at a low speed then gradually increase.
- In another bowl, whisk the egg yolks with the cream cheese and cream of tartar until thick and creamy. Carefully fold in around a quarter of the egg whites into the yolk mixture using a balloon whisk. Gently scrape in the rest of the egg white mixture into one side of the yolk mixture. Fold together carefully until just combined.
- Spoon 8 blobs onto the baking sheets and cook for 15-20 mins or until lightly golden and spongy.

Store cloud bread in an airtight container and eat within 2 days.
