Courgette fries with lemon mayo make a super easy snack that you can share at a party. Make a big batch and share with the whole family. Courgette fries make a change from chips, so it's really worth the extra effort of coating them in tempura and frying them. Use a tempura batter mix so it's hassle-free. The lemon mayo makes perfect accompaniment as it adds a little extra zing. This recipe works out at just 54p per person, so it's great value as well as an interesting party bite. And you won't believe it, but they are ready in 10 mins flat!
Ingredients
- 2 courgettes
- 350ml sunflower oil
- 150g pack tempura batter
- lemon mayonnaise and shredded basil, to serve

Method
Thinly slice 2 courgettes and set aside. Meanwhile, gently heat 350ml sunflower oil in a deep pan until hot.
Mix up a packet of tempura batter mix according to the pack instructions. Add the courgette and carefully dip into the hot oil. Fry for 2-3 mins until puffed and lightly golden.
Serve drizzled with lemon mayonnaise mixed with shredded basil.
