This very refreshing Mediterranean dessert is sweet and sour and gets your taste buds tingling. Quick to make it has the added attraction of having hardly any calories which is good to have in a dessert! This dessert is simple to make but is perfect for serving if you have friends and family round. Sweet, moreish and refreshing all in one. This delicious treat takes 10 to prepare and leaves your freezer to do all of the hard work.

Ingredients

  • 3–4 large juicy limes
  • 1 large lemon
  • 125g caster sugar

Method

  1. Peel the zest from the limes and lemon with a potato peeler, taking care not to remove too much of the white pith. Chop roughly and put into a pan with the sugar and 150ml water. Bring slowly to the boil, stirring until the sugar has dissolved. Remove from the heat and cool.
  2. Squeeze the juice from the limes and lemons and stir into the sugar mixture. Strain into a shallow freezer-proof container. Cover and freeze until the mixture freezes around the edge. This can take 1–2 hours depending on your freezer.
  3. Stir the mixture well with a fork to break up the ice crystals. Return to the freezer and repeat this process about every 45 mins or so until you have a frozen grainy mixture.
  4. Serve in chilled glasses topped with a twist of lime peel.
Top Tip for making Lime granita

To squeeze the maximum juice from a lime, bring to room temperature and roll under the palm of your hand to soften the fruit and get the juices flowing.
