Our recipe lets the natural sweetness of strawberries shine, just using a little sugar, vanilla, and lemon to enhance their flavour. Making your own low sugar jam is easier than you'd think and takes no time at all. We all know we should be cutting down on the added sugar in our diet, and this low sugar jam is a great swap to make to reduce your sugar intake whilst still enjoying delicious jam. British strawberries are at their best in the summer, so make the most of a plentiful strawberry crop and whip up a batch of home made low sugar strawberry jam. Whether you spread it on toast, eat with scones and cream, or stir through your porridge, this jam is a delicious way to preserve sweet and succulent strawberries.


  • 1kg hulled and halved strawberries
  • 1tsp vanilla bean paste
  • 400g granulated sugar
  • 1 lemon, cut into 4




  1. Put the strawberries into a preserving pan with the vanilla, sugar and lemon. Heat gently, stirring from time to time, until sugar is dissolved.
  2. Put 2 saucers in the freezer. Increase the heat and let the jam bubble for 15-20 mins, stirring from time to time, until darker and thicker. Put 1tsp of the jam on to the chilled saucers and leave for 30 secs. Push your finger through it - you're looking for the jam to wrinkle and not flood back into the gap.
  3. Remove jam from the heat and pour into sterilised jars.
