Tired of Pimm’s and lemonade? Make a refreshing Pimm’s mojito with lots of lime, mint, cucumber and soda water instead. It’s less sugary than a classic Pimm’s Cup cocktail…
- Juice of 1 lime
- Small handful fresh mint leaves – around 10, plus extra to garnish
- 2 tsp white caster sugar
- 45ml Pimm's
- Soda water
- Thin slices of cucumber, cut into crescents
Add the lime juice, mint and sugar to a chilled hi-ball glass and muddle with a cocktail muddler to mash up the mint leaves with the sugar and juice.
Fill the glass 2/3 full with ice cubes. Pour in the Pimm’s. Top up with soda water and stir well to combine. Add the cucumber slices. Garnish with extra mint leaves and serve immediately.
