Pork lettuce wraps are a lighter alternative to a taco or tortilla wrap, and are so packed with fresh flavour. We’ve used a mixture of pork mince and sweet potato to make these a bit more substantial, and served them with an Asian dipping sauce that is fresh, aromatic, and slightly spicy. Pork lettuce wraps are a great light meal to share with family or friends. You can let everyone get interactive and assemble their own wraps, once you’ve prepped all the fillings and toppings, to help each person cater to their own preferred tastes. Once you’ve tried these pork lettuce wraps, you could try making similar lettuce wraps using, beef, turkey, or even vegetarian mince for a twist on this simple and tasty dish. Pork lettuce wraps are a healthy week-night meal that are so flavourful as well as being good for you.
Ingredients
- 2 little gem lettuce, leaves separated
- 1tbsp sesame oil
- 500g lean pork mince
- Thumb sized piece of ginger, grated
- 2 cloves garlic
- 1 medium sweet potato, cut into small dice
- 2 spring onions, finely sliced
- 4 radishes, sliced
- 2tbsp salted peanuts, chopped
For the dipping sauce
- 1 red chilli, finely chopped
- 1 clove garlic, crushed
- 2tbsp sesame oil
- 1 tbsp fish sauce
- 4tbsp rice vinegar
- 2tsp sugar
- Fresh mint and coriander, to serve

Method
- Heat the sesame oil in a pan and fry the diced sweet potato for a few mins before adding the garlic, ginger and pork mince. Cook for a further 5-10 mins until the potato has softened and the pork is cooked through.
- To make the sauce, whisk all the ingredients together in a small bowl and check seasoning.
- To serve, fill each lettuce leaf with a little of the pork mixture, drizzle with sauce, and top with spring onion, radishes, peanuts and fresh herbs. Serve with extra sauce for dipping.
