    • 2 little gem lettuce, leaves separated
    • 1tbsp sesame oil
    • 500g lean pork mince
    • Thumb sized piece of ginger, grated
    • 2 cloves garlic
    • 1 medium sweet potato, cut into small dice
    • 2 spring onions, finely sliced
    • 4 radishes, sliced
    • 2tbsp salted peanuts, chopped
    • For the dipping sauce
    • 1 red chilli, finely chopped
    • 1 clove garlic, crushed
    • 2tbsp sesame oil
    • 1 tbsp fish sauce
    • 4tbsp rice vinegar
    • 2tsp sugar
    • Fresh mint and coriander, to serve

    • Heat the sesame oil in a pan and fry the diced sweet potato for a few mins before adding the garlic, ginger and pork mince. Cook for a further 5-10 mins until the potato has softened and the pork is cooked through.

    • To make the sauce, whisk all the ingredients together in a small bowl and check seasoning.

    • To serve, fill each lettuce leaf with a little of the pork mixture, drizzle with sauce, and top with spring onion, radishes, peanuts and fresh herbs. Serve with extra sauce for dipping.
