Ingredients
- 1tbsp olive oil
- 3 mixed peppers (yellow, red and orange), roughly sliced
- 200g chorizo, sliced
- 1⁄4tsp smoked paprika
- 2tbsp sherry vinegar

Method
- 1. Heat oil in a large frying pan, add peppers, chorizo and paprika. Season with freshly ground black pepper and cook over a medium heat for 10-15 mins until the peppers are soft and begin to caramelise. 2. Add the vinegar and cook for 2-3 mins until it has evaporated.
Top Tip for making Smoky spiced chorizo with peppers
Cook in advance and reheat in the oven for 5 mins before serving.
