These mini sandwiches in a snazzy snake shape are a doddle to whip up for a special birthday party or even just an afternoon treat. Children will be far more inclined to eat their lunch when it's presented in this fun and clever way. You can experiment with different flavours and decoration if you're feeling creative!

Ingredients

  • 6 slices white bread
  • 1tbsp peanut butter
  • 1tbsp strawberry jam
  • 2tbsp cream cheese
  • 1 small carrot, peeled and grated
  • 1tsbp snipped chives
  • 4 slices brown bread
  • A little butter, softened, for spreading
  • ¼ cucumber, sliced

For the decoration:

  • The ends of 1 cucumber
  • 2 circles of red pepper (cut using the top of a piping nozzle) or 2 slices of stuffed olive
  • 1 strip of ham, cut into a forked-tongue shape
  • 1 kiwi fruit, sliced (optional)
  • Chives (optional)
  • 1 cocktail stick, cut in half

You will also need:

  • 5cm fluted cookie cutter

Method

  1. Using white bread, make one peanut butter and jam sandwich and two cream cheese, carrot and chive sandwiches. Spread the brown bread with the butter and make two cucumber sandwiches.
  2. Cut out four rounds from each sandwich using your cookie cutter.
  3. Arrange the rounds in a snake shape on a large platter. Use the ends of the cucumber to make the head and tail. To make eyes, attach the pepper circles or olive slices using the cocktail stick halves. Cut a mouth in the front of the snake’s head, and insert the strip of ham.
  4. For added interest, you could decorate the plate with upturned slices of kiwi fruit and chives.

Get the kids to help make their lunch by having them spread the soft cream cheese, jam and peanut butter onto the bread and sprinkling the carrot. They'll love it even more if they've made it!
