This is a basic cookie recipe that is made up of classic chewy cookie dough that everyone loves. Just add chocolate chips, sugar coated chocolate beans, raisins or cherries to the biscuit dough, whatever takes your fancy!
Ingredients
- 200g light brown sugar
- 115g butter, softened
- 1 egg, beaten
- 200g plain flour
- 1/2tsp baking powder
- 1/2tsp bicarbonate of soda

Method
- Preheat the oven to 190°C/375°F/Gas Mark 5. Line 2 large baking sheets with non stick baking paper
- In a large bowl cream together the butter and sugar with a wooden spoon until light and creamy
- Stir in the egg and mix well. Then stir in the flour, baking powder and bicarbonate of soda and mix together to make a soft but not sticky dough.
- Roll the dough in your hands into 16 even sized balls and place on the prepared trays. Bake in the oven for 10 minutes, until golden but still a little soft in the centre. Leave to cool for 5-10 mins then place on a wire rack to cool completely when they will firm up.
Top Tip for making Basic cookie
If you like your cookies chewy, cook until golden but still a little soft in the centre, they will firm up when cool. If you prefer a crisper biscuit, cook a minute or two longer.
