These delicious pizza biscuits are perfect for making with the kids! With a sweet, sticky jam topping and a buttery biscuit base, these simple pizza biscuits are fun for the whole family. Our mummy blogger, Anneliese made these pizza biscuits as part of her goodtoknow blog Mummy's Little Helpers.
For the biscuits:
- 90g unsalted butter, softened
- 100g caster sugar
- 1 large egg
- ½tsp vanilla extract
- 200g plain flour
- ½tsp baking powder
For the pizza biscuit toppings:
- 18tsps strawberry jam, approximately
- 18 glacé cherries, approximately
- 50g marzipan (golden if possible)
- Preheat the oven to 180C/350F/Gas Mark 4.
- Check to be sure that the butter is beautifully soft before you make a start; it will make it so much easier for children to blend it with the sugar. Help them to cream the butter and sugar together. Once it is light and fluffy the egg can be added.
- If your child is old enough to crack the egg, ask them to crack it into a separate bowl first, then it won't matter when most of the shell ends up floating in the gloopy egg white!
- Beat the egg and vanilla into the creamed butter and sugar.
- Now you can ask your child to stir in the flour carefully. They might require a little help here as the dough is fairly stiff, so you may have to add a bit of muscle to the proceedings!
- That is the dough made; how easy was that? Flatten the lump of dough and wrap in cling film before placing into the fridge for at least an hour.
- While the dough chills in the fridge plonk down in front of some kids’ TV and try to retain a few brain cells!
- After the joyous hour is up, head back into the kitchen and extract the dough from the fridge. Ask your child to roll out the dough onto a floured worktop, to about a pound coin thickness (½ cm) before cutting out. Children will love using the cutter; they just need to remember to press it all the way down and to twist it so that the dough comes away from the worktop a little easier.
- Place the circles of dough onto a lined baking tray and put them into the oven for about 8 to 12 minutes, but keep an eagle eye on them. Biscuits do tend to go from anaemic to burnt in a matter of seconds!
- 10.Once the biscuits are out of the oven and cooling on a wire rack you can prepare the topping whilst trying to ignore the pitiful cries from your child asking for cherries (or is that just my child)!
- Place the jam into a small bowl along with a teaspoon. If the jam is firm, warm it for a few seconds in the microwave to make it easier to spread. Place the cherries on a plate ready for action. You may wish to cut the cherries in half if they are very big. Last of all grate the marzipan onto a plate. Marzipan is quite soft and sticky, so place it in the fridge a few hours beforehand to firm it up a bit.
- When the biscuits are cold they are ready to decorate. Give your child the teaspoon and ask them to spread a spoonful of jam onto each biscuit. The back of the spoon works fine for this. They can then pop a cherry in the middle of each biscuit and sprinkle with marzipan to finish them off.
