This smoked sausage casserole is packed with spicy pork sausage in a rich tomato sauce.
There's no denying that on a cold evening, all you want is a big one-pot recipe to feed the family. A hearty sausage casserole such as this one should do the trick. Whether you want to use smoked sausage bought from the supermarket, make your own or just use normal sausages, it's all up to you with this super simple recipe. It's also a great one to make if you're looking to use up some of the tins in your cupboard, as this sausage casserole combines fresh and tinned ingredients like baked beans to create something really filling and nutritious. To make it healthier, just swap the full-fat baked beans for reduced sugar and salt ones.
Ingredients
- 1 smoked sausage, sliced
- 2 carrots, peeled and diced
- 1 jar of tomato and basil sauce
- 415g can of baked beans
- 300ml water

Method
- Heat a splash of oil in a large pan and fry the carrots for 5 mins.
- Stir in the tomato sauce and water. Bring to the boil, cover and then simmer for 15 mins.
- Add the sausage and baked beans and cook for a further 10-15 mins until the carrots are tender.
