  • 475g baby leeks
  • 100ml single cream
  • 150ml vegetable stock
  • 50g Parmesan
  • 50g fresh breadcrumbs

  1. Preheat the oven to 200C. Lie the baby leeks in a shallow baking dish. In a jug, mix together the cream and vegetable stock and pour over the leeks so they are completely covered.
  2. Top with layers of the Parmesan and breadcrumbs, then bake in the oven for 30-35 mins until golden and bubbling. Serve immediately when hot.
