Berry custard meringues make a quick, cheap and easy dessert recipe that has still got the 'wow' factor. Ready in just 5 minutes, thanks to using shop-bought meringues, these tasty treats work out at about 92p per serving.
Ingredients
- 4tbsp berry jam
- 300g frozen berries
- 150g pot vanilla custard
- ½ 284ml pot Elmlea Double Light, whipped
- 8 small meringue nests

Method
- Warm together jam and berries in a small pan, until defrosted.
- Mix custard and whipped cream together, then spoon over 4 plated meringues, top each with berry compote and another meringue.

If you don't want to use a whole variety of berries you could opt for raspberries with raspberry jam or strawberries with strawberry jam etc.
