Brioche makes delicious sweet French toast thanks to its rich dough, this recipe is the ideal way to use up any that might be a bit too old to eat by itself. Dipped in egg and lightly fried it becomes sweet, caramelised and golden, perfect with the zingy citrus fruit on the side. This recipe serves one so make sure to increase the quantities if you're planning on sharing!
Ingredients
- 1 medium egg
- 2tbsp milk
- 2 slices brioche (1-2 days old)
- Knob of butter
- A little demerara sugar, optional
- Greek yogurt, for serving, optional
- 1 pink grapefruit, peeled and cut into thick rings
- 1 orange, peeled, cut into thick rings
- Dash of Cointreau, optional
- 2tsp brown sugar
- About 15g butter
- 1tbsp desiccated coconut

Method
- Put the fruit slices in one layer in a shallow baking dish or a foil-lined baking tray. Sprinkle with the Cointreau, if using, and brown sugar, and dot with the butter. Grill until just browned, it could take about 10 minutes. Sprinkle with the coconut and grill until toasted– this doesn’t take long.
- To make the eggy bread: Whisk the egg with the milk in a shallow dish. Dip the slices of brioche in it. Melt the butter in a frying pan and cook the bread until it’s browned and crisping on both sides.
- Serve the eggy bread, topped with Greek yogurt, if you like, along with the grilled fruit in a bowl.
