Keep your dinner party stress free by making this elegant canapé the day before and storing in the fridge. Simply ribbon courgette, roll up into circles and secure with a cocktail stick. Mix a creamy filling up by combining cream cheese, cottage cheese, lemon and black pepper and spoon into the courgette circles. Top with small folds of smoked salmon and garnish with short lengths of fresh chives to finish of the perfect canapé. Try substituting the courgette for cucumber just make sure you remove any excess water well with kitchen towel so they do not become soggy.
Ingredients
- 100g cream cheese
- 100g cottage cheese
- ½ lemon, juiced & zested
- 2 medium courgettes
- 60g smoked salmon
- 5g fresh chives, 5cm lengths

Method
- Mix the cream cheese, cottage cheese and lemon juice and zest together until combined. Season with salt and pepper.
- Using a peeler peel the courgette into ribbons. Pat down with kitchen towel to remove excess water. Curl a piece of courgette up into a 3cm circle, secure with a cocktail stick and place on a serving platter. Repeat with the remaining courgette.
- Spoon the cheese mixture into the courgette circles, top with a fold of smoked salmon and a couple of lengths of chives to serve.

These canapés hold well so can be made up the day before your party and kept covered loosely with cling film in the fridge.
