These pork steaks have a real kick thanks to a special spice blend called Berbere (available from supermarkets). Berbere is a key spice mixture in Ethiopian foods, made up of chilli seeds, garlic, ginger, dried basil, white and black pepper and fenugreek. Just mix it with olive oil then dip trimmed pork steaks into the dressing before cooking in a hot frying pan with a knob of butter.
Ingredients
- 2 thick pork steaks
- 1tbsp Berbere spice mixture
- 1tsp olive oil

Method
- In a shallow dish, mix the Berbere and oil together and dip the steaks into the mixture, coating both sides with as much as possible.
- Heat a large frying pan and cook the steaks approx. 5-7 mins each side. Add a knob of butter and baste the chops for a further 2 mins.
- Serve on warm plates and drizzle the pan juices over the pork.
