You might be surprised that the base for this green goddess salad dressing is avocado, which makes a really flavoursome, creamy and delicious dressing. Mix it up with rocket, tomatoes or any other green leaves that you fancy for a salad that can be enjoyed at any time of the day. Have a larger portion as a main at lunch, or a smaller one as a side to meat or fish.
Ingredients
- 1 avocado
- 75g soured cream
- 1 garlic clove, crushed
½
- lemon
½
- lime
- handful of tarragon, parsley and chives

Method
- In a food processor, blend the flesh from the avocado with the soured cream, garlic clove, the juice of ½ lemon, juice of ½ lime, large handfuls of tarragon, parsley and chives, 1-2tbsp cold water and some salt and pepper. Use this green goddess dressing on your salad - we love it with rocket, mixed green leaves and tomatoes.

Make sure you keep the dressing in an airtight container and in the fridge where it'll keep for a couple of days if you double the quantities
