You can grill or bbq these fruit skewers. The chocolate, orange and rum sauce is irresistible!
Ingredients
For the kebabs:
- Good selection of fruit, cubed as necessary
- Sesame seeds
- Muscovado sugar or honey
- Kebab sticks
For the sauce:
- 200g good plain chocolate (70% cocoa solids)
- Juice of 1 orange
- 2tbsp dark rum
- 285ml double cream
- 100g caster sugar

Method
- Thread the kebabs up and sprinkle with the sesame seeds and the sugar (or honey). Cook on the fire or grill for about 3 mins until the sugar has caramelised and the fruit is scorched.
- In a bain-marie (a bowl lodged above a pan of boiling water) melt the chocolate. Then whisk in the cream and add the rum and orange juice. Watch the sauce doesn't crack or separate. Pour over the kebabs - bliss!
Top Tip for making Hairy Bikers' fruit kebabs
You can use whatver fruit you fancy for this - pineapple, pear, dates, apple, banana - but think of fruit that will caramelise.
