Hot wings are a classic American appetizer that are perfect for sharing with friends. The succulent chicken wings are marinated in a brine then coated in a sweet and spicy sauce. These irresistible hot wings are best served warm and paired with a dipping sauce. We’ve served our hot wings with a tangy blue cheese dip to balance out the spice and add a rich and creamy flavour that is so moreish.
Ingredients
For the marinade:
- 400ml apple juice
- 80g granulated sugar
- 180ml white wine vinegar
- 2tsp chilli flakes
- 60g salt
- 1tsp crushed black pepper
- 1.5kg chicken wings
For the hot sauce:
- 100ml ketchup
- 4tbsp honey
- 5tbsp white wine vinegar
- 1tbsp mustard
- 1tbsp Worcestershire sauce
- 1tbsp soy sauce
- 4-6tbsp sriracha hot sauce
- 1tsp chilli powder
For the dipping sauce
- 150ml soured cream
- 3tbsp mayonnaise
- 50g blue cheese, crumbled
- juice of 1 large lemon

Method
- For the marinade, heat apple juice in a saucepan, then add the sugar, vinegar, chilli flakes, salt and black pepper. Remove from the heat and add a litre of water. Place the marinade in a large, non-metallic container, and add the chicken wings, then stir well and leave in the fridge overnight to marinate.
- Preheat the oven to 220°C. Remove wings and discard marinade. Spread wings on a baking sheet and drizzle with a little olive oil. Bake for 15-20 mins until cooked through.
- Meanwhile, prepare the hot sauce by mixing together all the hot sauce ingredients. Take the wings out of the oven, toss them in the hot sauce, and return to the oven for a further 10-12 mins.
- For the dipping sauce, mix together all ingredients and season well to taste. Once ready, arrange the chicken wings on a platter and serve with the sauce on the side.
