Indian spiced king prawns make fantastic party food to share. Serve with cocktail sticks so guests can pick them up and dip them in the mango chutney for that authentic Indian flavour. The prawns take just 10 minutes to make, but really benefit from at least 2 hours marinating so it's worth getting organised. At least this will leave you plenty of time to concentrate on more fun things, like getting glammed up!

  • 350g raw jumbo peeled king prawns
  • 80g Rogan josh curry paste
  • 1tbsp sunflower oil
  • 4tbsp mango chutney
  • chopped coriander, to serve

Method

  1. Defrost the king prawns and coat well in Rogan josh curry paste. Leave in the fridge to marinate for at least 2 hours.
  2. Heat 1tbsp sunflower oil in a large frying pan and fry the marinated prawns for 2-3 mins on each side, until crisp. Serve with 4tbsp mango chutney and scattered with some chopped coriander.
