This quick tapas dish with chorizo and breadcrumbs is so quick and easy to make, it will soon become your go-to when you need a delicious snack to share with friends. Inspired by Spanish tapas, this recipe combines chorizo sausages, bread and smoked paprika for an absolutely delicious and moreish dish. The best part is that this tapas recipe uses stale bread, so you can just use up bread that is about to go off and you'll save money and not waste food - win win! With this Spanish fried crumbs dish you can feed four to six people as a small tapas meal, so it's ideal for a small gathering with friends or family, alongside other tapas. Matt says: 'This might sound a little strange, but stick with me. Chorizo can sometimes be a bit overpowering, but with a touch of parsley to calm it down and the crispy bread to mellow everything, this is simplicity itself. Wash it down with a cold beer and you could be in a tapas bar on a Spanish side street.'
Ingredients
- Olive oil, for frying
- 4 chorizo sausages, thickly sliced
- 3 garlic cloves, chopped
- 500g stale bread, torn into chunks
- 1/2 tsp smoked paprika
- 2 tbsp chopped flat-leaf parsley, to garnish

Method
- Heat a little olive oil in a frying pan over a medium heat and add the chorizo slices. Cook gently until they are lightly browned and have released some of their delicious fragrant oil. Removed the chorizo from the pan and set aside.
- Add the garlic to the pan along with the bread chunks and fry in the lovely chorizo oil until golden. Return the chorizo to the pan, add the paprika and give everything a quick stir. Serve sprinkled with the parsley.
