Ingredients

  • 4 to 5tbsp olive oil
  • 55g (2oz) Parmesan, grated
  • 55g (2oz) sun-dried tomatoes

Method

  1. Place the potatoes in a large pan of water. Bring to the boil and simmer for 15 mins or until soft. Drain, reserving 2tbsp cooking water.
  2. Mash the potatoes with the oil and reserved water. Stir through the Parmesan and tomatoes and season well.
