Ingredients

- 4 to 5tbsp olive oil
- 55g (2oz) Parmesan, grated
- 55g (2oz) sun-dried tomatoes

Method
- Place the potatoes in a large pan of water. Bring to the boil and simmer for 15 mins or until soft. Drain, reserving 2tbsp cooking water.
- Mash the potatoes with the oil and reserved water. Stir through the Parmesan and tomatoes and season well.
