  • Soy sauce and spices give the pork a tangy, Oriental twist in this tasty recipe for all the family

    • For the marinade:
    • 2 tbsp dark soy sauce
    • 1 tbsp honey
    • ½ tsp Chinese 5 spice
    • 1 clove garlic, crushed
    • 1 tbsp sunflower oil
    • 1 tbsp sesame oil
    • For the apple compote:
    • 3 apples, peeled, cored and finely chopped
    • Zest and juice of 1 lime
    • 1 red chilli, finely sliced
    • 1/8 tsp dried chilli flakes (optional)
    • 2-3 tbsp chopped fresh coriander
    • 1 tsp chopped fresh flat leaf parsley

    • Put the pork in a shallow dish. Mix together all the ingredients for the marinade and massage into the pork. Cover and chill for at least 30 minutes, or overnight.

    • For the apple compote, put the finely chopped apples, lime zest and lime juice and 3 tablespoons water into a saucepan. Cover with a lid and cook over a medium heat for 10-15 minutes, until soft. Transfer to a liquidizer and process until smooth. Allow to cool. Stir in the remaining apple compote ingredients and season to taste.

    • Meanwhile, preheat the oven to 200°C/fan180°C/ gas 6. Heat a griddle on the hob until smoking. Put the pork steaks onto the griddle and briefly sear for about 1-1½ minutes on each side. Transfer to the oven and cook for 5 minutes, until cooked through. Serve with the sauce and vegetables.
