Sometime nothing can beat a sandwich; but often shop bought ones come with calorific fillings and a hefty price tag. With this special combination of tangy goat’s cheese, salty prosciutto and sweet fig, we think this sandwich is a real winner. Plus with only one slice of bread it’s half the carbs and half the calories! Try to get the best ingredients you can afford for a truly luxurious snack. You could even turn this into a great canapé at a dinner party by using tiny crostini bread.
Ingredients
- 2 slices granary seeded bread
- 50g soft goat’s cheese
- 2 slices of prosciutto ham
- 1 fig, quartered
- Rocket, to garnish

Method
- Spread goat’s cheese over the bread. Top with a slice of prosciutto and add quarters of the fig. Garnish with rocket. Serve.
Top Tip for making Prosciutto and fig open sandwich
Seeded granary bread works best here but if you prefer white, try to get a good quality whole loaf which you can cut yourself.
