If you need to up the amount of omega 3 in your diet, then this is a great way to do it. Oily fishes a great source of it and smoked mackerel fillets are very cheap. Unlike other pates, this recipe doesn't require any cooking. It also uses low-fat cottage cheese which helps to keep the calories down. Lemon juice adds some zing, while the nutmeg and cayenne pepper add some spice. This recipe makes enough pate to do sandwiches all week. It keeps really well in the fridge and means you don't need to think too hard about what to put on your sardines!
Ingredients
- 200g peppered mackerel fillets (skin off)
- 300g low-fat cottage cheese
- Zest & juice 1/2 lemon
- Pinch of nutmeg
- Pinch of cayenne pepper

- Put all of the ingredients in a food processor and blitz.
- Check the seasoning and then spoon into a tuppaware and chill in the fridge until you're ready to use.
