A couli is simply a smooth pureed sauce made from either fruit or vegetables. This refreshing version is made with raspberries sweetened with a little sugar and with an added dash of lemon juice to bring out the flavour of the berries. A swirl of fruit couli can liven up any dessert and make it look and taste extra special. If you have a glut of fresh (or frozen) berries it’s worth making double quantity and freezing half for another day – it will keep for up to 2 months.
Ingredients
- 350g raspberries
- 25g icing or caster sugar, plus extra to taste
- 2tsp lemon juice

Method
- Place the raspberries in a food processor with the sugar and lemon juice and process for 20-30 secs until pureed.
- Set a fine-holed sieve over a large bowl and pour the puree into the sieve. Use the back of a spoon to push the puree through the sieve to make a smooth sauce without any seeds.
- Taste the sauce and stir in a little more sugar if needed. Pour into a small jug and cover and chill in the fridge until required.
Top Tip for making Raspberry couli
Try this recipe with any fresh or frozen berries – try strawberries, blueberries, blackberries or black or red currants. You may need to add more sugar if using sharper tasting fruit.
