    • 75g (3oz) softened butter
    • 75g (3oz) icing sugar
    • 25g (1oz) chopped pistachio nuts
    • 2tbsp dark rum


    • Cream together the butter and icing sugar until fluffy.

    • Stir in the pistachio nuts and dark rum.

    • Refrigerate until you’re ready to use.

    Serve this rum butter with Christmas pudding - or use it to transform mince pies.
