The kids are going to love making and eating these ice cream snowballs. They're so simple to make and taste delicious too. This recipes uses coconut ice cream, but you can use vanilla if preferred. Top with coconut pieces, marshmallows and not forgetting the all important edible glitter, these festive favourites are perfect for dinner parties or as party food you can share with friends and family. It takes only 20 mins to rustle up these snowballs and then just pop into the freezer and let it do all of the hard work for you. These snowballs would make a great Christmas Day dessert for little ones or for those who are not Christmas pudding or trifle fans!
Ingredients
- 500ml tub coconut ice cream (or vanilla ice cream)
- 250g white chocolate, broken
- 75g desiccated coconut
- 100g mini white marshmallows
- 1tsp edible glitter

Method
- Scoop the ice-cream into 4 equal portions, freeze for at least 2 hours.
- Melt the white chocolate. Mix the coconut, marshmallows and glitter in a bowl and keep to hand.
- Make one snowball at a time, keeping the other ice-cream scoops in the freezer. On a baking tray or chopping board lined with baking parchment, add a blob of white chocolate. Working very fast, set an ice-cream scoop on top, cover a small section at a time by spooning over a little melted chocolate, scrape from the bottom so the ice-cream is fully sealed in. Immediately press on the marshmallow topping, repeat to cover the rest of the snowballs. Freeze overnight or for 30 mins to firm up.
