We’ve chosen three healthy toppings for ours, a cottage cheese and berry toast, a peach and cashew butter toast, and finally a sweet potato toast topped with a fresh spinach, pea and mint dip. You could try experimenting with other topping for your toast, why not try other nut butter and fruit combinations for a balanced breakfast, or other savoury toppings for a lunch that is a bit different. If you love sweet potatoes, but don’t have much time to cook, then this recipe is for you. The toasts only take a few minutes to cook, and are almost as quick and easy as making regular toast! Sweet potato toast is gluten free, and packs a real nutritional punch. Sweet potatoes are a great source of vitamins A and C, and are high in antioxidants like beta carotene. As well as being good for you, this sweet potato toast is a beautiful dish that is so photogenic and Instagram-ready. Ingredients
- 1 large, round sweet potato, cut into slices lengthways
For the berry sweet potato toast topping
- 2tbsp cottage cheese
- small handful of blueberries
- 1tsp honey
For the peach sweet potato toast topping
- 1 peach, thinly sliced
- 2tbsp cashew butter
For the pea and mint sweet potato toast topping
- 3tbsp super greens dip

Method
- Toast the slices of potato in the toaster. This may take a few toastings, turning the slices each time until cooked through.
- Decorate the toasted potato with toppings of you choice.
