Sweet potato toast is the latest trend showcasing this versatile superfood. You may not have thought it possible, but you can actually cook slices of sweet potato in your toaster to make this tasty sweet potato toast. Sweet potato toast works well with both sweet and savoury toppings. We’ve chosen three healthy toppings for ours, a cottage cheese and berry toast, a peach and cashew butter toast, and finally a sweet potato toast topped with a fresh spinach, pea and mint dip. You could try experimenting with other topping for your toast, why not try other nut butter and fruit combinations for a balanced breakfast, or other savoury toppings for a lunch that is a bit different. If you love sweet potatoes, but don’t have much time to cook, then this recipe is for you. The toasts only take a few minutes to cook, and are almost as quick and easy as making regular toast! Sweet potato toast is gluten free, and packs a real nutritional punch. Sweet potatoes are a great source of vitamins A and C, and are high in antioxidants like beta carotene. As well as being good for you, this sweet potato toast is a beautiful dish that is so photogenic and Instagram-ready. - 1 large, round sweet potato, cut into slices lengthways
For the berry sweet potato toast topping
- 2tbsp cottage cheese
- small handful of blueberries
- 1tsp honey
For the peach sweet potato toast topping
- 1 peach, thinly sliced
- 2tbsp cashew butter
For the pea and mint sweet potato toast topping
- 3tbsp super greens dip
- Toast the slices of potato in the toaster. This may take a few toastings, turning the slices each time until cooked through.
- Decorate the toasted potato with toppings of you choice.
