Succulent and spicy pork takes pride of place in this easy-to-prepare dish. Perfect for a flavoursome family meal, it is delicious served with some rice noodles. On the table within half an hour, this Thai-style pork is a great alternative to a takeaway
Ingredients
- 1tbsp vegetable oil
- 300g pork mince
- 1tbsp fish sauce
- 1tsp dark soy saice
- 20g grated ginger
- Juice of 1 lime
- 1/2 green chillies, chopped
- 2 garlic cloves, grated
- 4tbsp desiccated coconut
- 2tbsp crushed peanuts
- 1tbsp caster sugar
- Chopped coriander to serve
WEIGHT CONVERTER
Method
- Heat the oil in a pan.
- Stir in the chilli and ginger and fry for 1 minute.
- Add the pork and brown well.
- Add the fish sauce, lime juice, soy sauce, garlic and coconut and sugar.
- Taste to check seasoning.
- Reduce heat and simmer until cooked through.
- Serve topped with crushed peanuts and coriander over some egg noodles.
Top Tip for making Thai chilli and coconut minced pork
If you don’t fancy noodles you could always serve with rice. Some broccoli cooked with chilli and garlic would also make a great accompaniment
