This unusual, warm potato salad with Scandinavian flavours is packed full of omega oils from the pickled herring rollmops. The finely sliced red onion and fennel give a lovely crunchy texture and the soured cream adds a great touch of indulgence. Perfect for a picnic, or enjoyed as a snack, this makes an appetising alternative to the standard potato salad. Tasty, inexpensive and easy to prepare, this dish make a satisfying choice. Just boil some potatoes, marinate the fennel and onion and add a little sweetness with some sugar – delicious!
Ingredients
- ¼ of a bulb of fennel, finely sliced
- 1 small red onion, finely sliced
- 2tbsp olive oil
- 1tbsp white wine vinegar
- 1tsp caster sugar
- 1tsp mustard seeds
- 500g new potatoes
- 5 rollmops (pickled herrings), cut into strips
- 300ml soured cream
- 1tbsp chopped chives
- Salt and freshly ground black pepper

Method
- Put the fennel, onion, olive oil, vinegar, sugar and mustard seeds in a bowl and leave to marinate.
- Boil the new potatoes. When cooked, cut them into chunks and, while they are still warm, add them to the fennel and onion mixture.
- Add the rollmops, soured cream and chives, and season with salt and pepper to taste.
