This unusual, warm potato salad with Scandinavian flavours is packed full of omega oils from the pickled herring rollmops. The finely sliced red onion and fennel give a lovely crunchy texture and the soured cream adds a great touch of indulgence. Perfect for a picnic, or enjoyed as a snack, this makes an appetising alternative to the standard potato salad. Tasty, inexpensive and easy to prepare, this dish make a satisfying choice. Just boil some potatoes, marinate the fennel and onion and add a little sweetness with some sugar – delicious!

Ingredients

  • ¼ of a bulb of fennel, finely sliced
  • 1 small red onion, finely sliced
  • 2tbsp olive oil
  • 1tbsp white wine vinegar
  • 1tsp caster sugar
  • 1tsp mustard seeds
  • 500g new potatoes
  • 5 rollmops (pickled herrings), cut into strips
  • 300ml soured cream
  • 1tbsp chopped chives
  • Salt and freshly ground black pepper

Method

  1. Put the fennel, onion, olive oil, vinegar, sugar and mustard seeds in a bowl and leave to marinate.
  2. Boil the new potatoes. When cooked, cut them into chunks and, while they are still warm, add them to the fennel and onion mixture.
  3. Add the rollmops, soured cream and chives, and season with salt and pepper to taste.
