  • Cumberland sauce goes really well with sausages but we also like it with beef. Try out this recipe when your friends come over – they’ll be impressed

    • 1tbsp olive oil
    • small knob of butter
    • 4 beef fillets (approx 1in thick)
    • 120g pancetta or thinnly sliced ham
    • 10g mushrooms chopped into small pieces
    • 1 small glass red wine (approx 100ml)
    • 4dsp Cumberland Sauce

    • Heat the oil and butter in a heavy bottomed frying pan and fry the beef fillet for 2 mins each side ? they should be rare in the middle ? cook for longer if you prefer.

    • Transfer to a plate.

    • Fry the pancetta or ham and mushrooms in the juices in the pan for 5 mins until slightly golden.

    • Add the red wine, leave to bubble for a min, then add the Cumberland sauce and heat through for a couple of minutes.

    • Serve the beef fillet with a little sauce drizzled over the top, eat with creamy mash and steamed green vegetables or salad.
