Make a budget cheese and onion pizza like our mummy blogger Anneliese, who says: 'I am a real fan of homemade pizza. Not only is it healthier to make your own but it is also far cheaper. Flour and yeast can be purchased for just a few pence and, if you choose your toppings carefully, you can enjoy two homemade pizzas for just £1. Another bonus is that the children can get involved by helping to knead the dough and by adding toppings to the pizza. I think that when children help in the kitchen then they are more inclined to try what they have produced. The only trouble is that my four year old now wants to make pizza every day!'
Ingredients
For the dough:
- 225g plain flour
- 2tsp fast action yeast
- 1tsp sugar
- 1tsp salt
- 150ml tepid water
- Olive oil, for greasing
For the topping:
- 400g tin chopped tomatoes
- 1 onion, diced
- 2-3 tomatoes, sliced
- 50-75g Cheddar cheese, grated

Method
- To make the dough: Weigh the flour, yeast, sugar and salt into a large mixing bowl. As you measure the ingredients into the bowl, try to avoid the salt and yeast touching as the salt inhibits the yeast.
- Add the tepid water to the floury mixture and bring the ingredients together with your hands until you have a ball of dough.
- Turn the dough out on to a floured worktop and knead for at least 8-10 minutes. It can get tedious after a while but it really is worth the effort!
- When the ball of dough is smooth and springs back to the touch, place into a clean and oiled bowl. Cover the bowl with either a clean tea towel or a piece of oiled cling film. Leave the dough to rise for an hour; by then it should have doubled in size.
- Just before your dough is ready to roll out, start to prepare the topping.
- Preheat the oven to 230°C/450°F/Gas mark 8.
- Open up the tin of chopped tomatoes. If you have time, pour the chopped tomatoes into a microwavable bowl and heat in the microwave for a few minutes before using. This isn't necessary, but it does make the sauce slightly thicker and easier to spread.
- Have your chopped onion, tomatoes and grated cheese by your side, ready to use.
- Now it's time to roll out your dough. I tend to make two thin bases with my dough but you can make one large thicker pizza base. It's up to you! Just bear in mind that a thicker pizza base will take a little longer to cook.
- Once your dough is rolled out cover it in a thin layer of chopped tomatoes. Spread too thickly and it could make for a soggy pizza and it will be tricky to eat. Less is more.
- Sprinkle over the diced onions and sliced tomatoes before covering with a sprinkle of cheese.
- Place your pizza into the preheated oven and cook for approximately 20 minutes, until the cheese is golden and bubbling. Slice and serve.
