Ingredients
- 4 clementines
- 4tbsp caster sugar
- 4tbsp Cointreau
- 4tbsp orange juice

Method
- Remove skin from clementines and slice into rounds. Dissolve sugar in orange juice, then add Cointreau and boil until reduced to 2tbsp syrup.
- Heat pancakes according to the packet instructions. Divide clementines between pancakes, drizzle with the syrup, then fold pancakes. Serve with crème fraîche.
Top tips for making orange syrup for pancakes
Instead of clementines, try caramelised apples, vanilla extract and a splash of Grand Marnier or a jar of Belgian chocolate sauce, sliced bananas and flaked almonds.
