The classic taste of hummus has become a regular part of many a vegetarian’s diet. Made with protein rich chickpeas, olive oil, cumin, garlic and lemon, it has become a staple to a meat free diet. These wraps are too good not to share and everyone will enjoy them, veggie or not. We’ve used shop bought hummus for a speedy snack but if you’ve got the time, it’s always worth whizzing up your own. Try griddling the tortilla wraps to achieve the charred stripes which add extra flavour.
Ingredients
- 4 tortilla wraps
- 200g pot of any hummus, flavoured or plain
- 2 large tomatoes, chopped
- 1 bag of mixed leaves
- Salt and freshly cracked black pepper

Method
- Lay each wrap flat on the work surface and spread over 50g of hummus. Top with a handful of salad leaves and some diced tomatoes, and season with little salt and pepper. Roll and serve.

These make great healthy snacks, perfect for the kids at school. Pack some raw carrot sticks and some fruit for an energy boosting lunch.
