These delicious and simple quiche toasties are so easy to make - the kids are going to love help making them

These quiche toasties are great fun for making with the kids and are so easy too! A fresh tomato topping with a sprinkle of cheese. The kids can help with making - from cracking eggs to sampling their mini creations afterwards. Our mummy blogger, Anneliese made these quiche toasties as part of her goodtoknow blog Mummy's Little Helpers.

Ingredients

  • 6 slices of white bread (or brown if desired)
  • 8 cherry tomatoes, depending on size
  • 50g mature cheddar cheese plus a little more to sprinkle over the top
  • 2 large eggs
  • 2tbsps milk

  • 12 hole cupcake tin
  • 3½ inch round cutter

Method

  1. First of all preheat the oven to 220°C/425°F/Gas Mark 7, then grease the tin with a little oil. You could dab a little oil onto a kitchen towel and ask your child to wipe it around all the holes. This should keep them out of mischief while you find your round cutter and rolling pin!
  2. Lay out one slice of bread at a time and ask your little one to flatten the slices of bread with the rolling pin. By making the bread a little thinner you should be able to cut out two circles from each piece.
  3. Now it is time to let your child loose with the cutter. Just check that they take the cutter right to the edge of the crusts so they can cut out two circles. It doesn't matter one little bit if they tear the bread a little or if the circles aren't perfect!
  4. Ask your child to press the bread circles into the tin holes, you might have to help with this a little bit!
  5. Now we can move on to the filling. Depending on the age of your child you could be brave and ask if they would like to crack the eggs into a bowl. A good idea might be to get them to break the eggs into a separate bowl so you can easily pick out any stray shell!!
  6. Once you have wiped the egg from your hands and rinsed it out of your child's hair (how do they manage to get it everywhere?) you can add the two tablespoons of milk to the eggs and mix together.
  7. My little boy loves the grater but, at this point, I grate the cheese and add it to the egg and milk mixture. If your child is old enough then by all means they can grate the cheese themselves.
  8. The next part is good fun as they children can add a few pieces of tomato to each bread case. He really enjoyed this and knew not to put too much in each case.
  9. Once all the tomato has been added we move onto the messy bit! My son insisted on spooning the eggy mixture over the tomatoes. I gave him a teaspoon for the job and I stooped beside him holding the bowl. My goodness my back was soon aching as he took a long time to complete the job but refused to let me help! Please don't worry when the egg mixture flows down the sides of the bread cases; this recipe is very forgiving and the toastie quiches won't end up soggy!
  10. Last of all, sprinkle over a little more cheese before placing the quiches into the oven. They will take about 20 minutes to cook.
  11. When the quiches are golden brown on top take out of the oven and quickly 'flick' them out of the tin and onto a wire rack to cool.
Top Tip for making Quiche toasties

The toastie quiches are best eaten warm but are just as tasty cold. Great for lunchboxes, picnics and general scoffing!
