Our Rolo cookies use six ingredients and take 25 minutes to make from start to finish.

This delicious twist on our easy chocolate chip cookies uses Rolos for a moorish, indulgent caramel flavour. To give them a sophisticated finish you could scatter with a pinch of sea salt flakes but they are equally delicious as they are. 

Please note the nutrition for this recipe is based on 16 small cookies. 

Ingredients

  • 115g unsalted butter, softened
  • 115g light soft brown sugar
  • 1 large egg
  • 225g plain flour
  • ½ tsp bicarbonate of soda
  • 12-16 Rolos

Method 

  1. First of all, lightly grease your baking tins , we like a 16-hole mini muffin tin. Heat your oven 170C (150C fan, Gas 3).
  2. Weigh the softened butter and sugar into your mixing bowl. Beat the ingredients together until light and fluffy.
  3. Mix in the egg and beat until the mixture is light and fluffy. Weigh in the flour and bicarbonate of soda. Use a wooden spoon or spatula to bring everything together.
  4. Use your hands to gather up small handfuls of dough. Roll the dough into a ball, between your hands, then place a ball into each hole in your tin.
  5. Cook for 10 minutes and just before the cookie cups come out of the oven, open up the packets of Rolos and have them laid out, ready to use. The cookie dough will start to firm up as soon as it comes out of the oven, so you will need to be prepared.
  6. Once out of the oven, push a Rolo into the middle of each one, straight away. The cookie cups will be very hot so be careful! Leave the Rolo cookie cups in the tin to cool. If you touch the Rolo centres before they are cold, they will collapse and lose their shape.
  7. When the Rolo cookie cups are cold and the centres have set, take out of the tin and enjoy!

Top tips for making Rolo cookies

You can use a 12-hole bun tin but the cookies will be a little larger and the calorie count will be higher. If your hands get sticky during the shaping of the balls, dust them with a little extra flour. 

What can I use instead of Rolos to create these cookies?

A square of Cadbury Dairy Milk Caramel would give a similar flavour combination or if you prefer Galaxy Smooth Caramel that would also be delicious.

Can you still buy Rolos in UK?

Yes many supermarkets and confectionary stores still sell Rolo chocolates. Iceland, Waitrose & Partners and Sainsbury’s all stock them online.

Are Rolos toffee or caramel?

Rolos have a smooth, soft caramel centre. It has a little chew but not as much as toffee. They were first launched in 1937 and remain very popular today.
