  • Soft, chewy flapjacks can be achieved in less than 10 minutes when you cook them in a microwave. No more crispy, rock hard edges! This recipe really is so simple and a great way to get the kids involved in the kitchen. Even the youngest child can help with the weighing, mixing and decorating and there will be no opportunity for boredom! In just a few minutes you can be tucking into a delicious homemade flapjack; what are you waiting for?!


    • 100g unsalted butter, softened
    • 75g light brown sugar
    • 2 tbsp golden syrup
    • 200g porridge oats
    • 50g dried apricots
    • To decorate:
    • 100g white chocolate
    • Sprinkles (optional)


    • Ask your child to lightly grease a 7 inch (square) microwaveable dish with butter. Be sure the dish will sit comfortably on the turning plate in the microwave. If the turning plate cannot rotate, the flapjack will not cook evenly. Place the greased dish to one side for later.

    • Find a large microwaveable mixing bowl and weigh in the butter and light brown sugar. Place the bowl into the microwave and heat on high, in 15 second intervals, stirring in between, until the butter and sugar have melted. Stir the golden syrup into the melted mixture.

    • Your little helper can now pour in the porridge oats and give the mixture a good stir. It will already smell delicious!

    • Use kitchen scissors to cut up the dried apricots. If your child is old enough to use scissors then they can take over this task.

    • The pieces of dried apricot can now be stirred into the oaty mixture.

    • Your helper can tip the mixture into the awaiting greased dish. They can use the back of the spoon to press it firmly into the dish.

    • Place the flapjack into the microwave and heat on high for 5 minutes. It’s a good idea to check after 4 minutes and then again at 4 and a half minutes, to be sure it doesn’t cook too fast. The mixture will look very soft, but it will firm up as it cools.

    • Take the cooked flapjack from the microwave and leave to cool in the dish.

    • Once the flapjack is cold, it’s time to slice up into bars and place onto a serving plate.

    • Melt the white chocolate in a small microwaveable bowl, in 10 second intervals, stirring in between.

    • Take a small sandwich bag or piping bag, spoon in the melted chocolate. Snip the end off of the bag to create a tiny hole and then your child can drizzle the melted chocolate over the flapjacks.

    • Most children believe everything must be smothered in sprinkles; these flapjacks are no exception so let them get sprinkling!
