This is our favourite ever quesadilla recipe, and once you try it once it'll be yours too. Packed full of melting cheese and spicy chorizo our quesadilla recipe is so tasty and ready in just 20 mins, using mainly store-cupboard ingredients.
The whole family will love this quesadilla recipe, oozing cheese, spicy chorizo and spring onion. They're simple but delicious, and are so quick to make midweek. We doubt there'll be leftovers, but if there are then these reheat well too. Pop the filling into an airtight container and store in the fridge for up to 2 days. Add to the wraps when ready to cook. Simply warm under a grill or in a hot frying pan for a couple of minutes until hot through and serve with more toppings - sour cream, guacamole and salsa are all favourites of ours. This classic Mexican recipe is bursting with flavour thanks to the spiced chorizo and mature Cheddar cheese. Serve with homemade potato wedges or sweet potato fries and a side salad.
Ingredients
- 1tsp olive oil
- 2 flour tortilla
- 30g Cheddar, grated
- 1 spring onion, chopped
- 4-6 slices chorizo
- 2tbsp guacamole
- 2tbsp soured cream
- chopped herbs
- paprika, to serve

Method
- Heat the oil, until very hot. Add a tortilla, then top with the cheese, spring onion and chorizo. Put a second tortilla on top and press down with a fish slice. Cook for a couple of mins, then turn and cook for a couple of mins on the other side.
- Remove to a board and slice into 6 equal triangles. Serve with the guacamole and soured cream, sprinkled with herbs and a little paprika.

Serve these quesadillas cold for lunch the next day.
