Now we all love the classic cheese burger, so why not mix it up and instead of the cheese on the outside, the cheese becomes the star inside the burger! Our melting cheese burgers and potato wedges recipe will be a real crowd pleaser at any family BBQ or gathering.

To make the burgers is really simple as the only additional step from making a classic burger is when you need to wrap your ball of mince meat mixture around a handful of your grated cheese. It's so easy in fact that the kids could even join in with the prep and share the secret surprise of the oozy cheese filling.

For the potato wedges you can relax as the oven will be doing most of the work, roasting them for 20 minutes so they can develop a nice crispy outside. Making your own potato wedges is a much healthier option too compared to store bought chips.


  • 80g grated mature Cheddar
  • 6 potatoes, each cut into 6 wedges
  • A little sunflower oil or olive oil
  • 600g lean steak mince
  • 2-3tbsp freshly chopped thyme
  • Pinch of chilli flakes
  • 1 medium egg
  • 4 burger buns




  1. Prepare the oven to 200 °C (180°C fan oven) gas mark 6. Wash your potato and slice it in half, and then in half again. To achieve the classic potato wedge shape, cut the potato halves again down the centre of the potato. Put the wedges in a roasting tin and drizzle with a little oil. Roast for 20 minutes on their own.
  2. Put the mince in a bowl and mix together with the thyme, chilli flakes and egg. Divide the mixture in o four. Take one portion and spread flat into a small circle, pat the middle to make a shallow well, then put quarter of the cheese on top.
  3. Season, and then wrap the beef around and over the cheese to cover.
  4. Shape into a ball then flatten slightly into a burger. Repeat with remaining mince and cheese to make all 4 burgers. Add the burgers alongside the wedges and cook for 15-20 minutes until the burgers are cooked all the way through and the wedges are golden.
  5. Toast the burger buns, top with lettuce, sliced tomato, cucumber and red onion then the burger. Add some chutney and then enjoy!
