There's so much you can do with salmon fillets, like these goujons with lime and coriander dressing - great as a savoury snack or starter

Ingredients

  • 454g (1lb) salmon fillets, skinless, cut into 3in (6.75cm) strips125g (4oz) breadcrumbs
  • 2tbsp fresh parsley (chopped)
  • Salt and pepper
  • 50g (2oz) Cheddar cheese (grated)
  • 25g (1oz) plain flour
  • 1 egg, beaten
  • 2tbsp olive oil

For the dressing:

  • 1tbsp mayonnaise
  • 1 lime, zest and juice
  • 2tsp coriander (chopped)
  • Salt and pepper

Method

  1. Wash the salmon fillets and dry on kitchen paper.
  2. Mix the breadcrumbs, parsley, salt, pepper and cheddar cheese.
  3. Toss the salmon strips into the flour, dip in to the beaten egg and then toss in to the breadcrumb mixture.
  4. To make the dressing, mix together all the dressing ingredients and season well.
  5. Put 1tbsn of the olive oil into a non-stick frying pan and gently place the goujons into the pan. Fry gently until golden brown, for about 2 mins on each side.
  6. Serve the goujons with the dressing and lime wedges.
